Going meatless (legged meat) for just one day a week has numerious health and enviornmental benefits. Health benefits include reducing risk of heat disease and stroke. Diets low in animal fats tend to be lower in the bad fats that cause high LDL cholesterol, and higher in the good fats raising HDL.
Environmentally, studies show tha tmeat production produces a significant amount of greenhouse gas and use approximately 1,850 gallons of water for one pound of beef.
Save your heart and some water by just avoiding meat for one day a week!

Broiled Salmon with Lemon, Rosemary, Garlic and Cilantro
Ingredients
- 4oz salmon filets, with skin on
- Olive oil spray
- 1 bunch of rosemary
- 2 cloves of garlic, crushed
- 1/2C cilantro, choped
- 1 lemon, thinly sliced
Directions
- Place salmon in a shallow dish and spray lightly with olive oil
- Rub crushed garlic over fish and place in fridge, covered, for at least 2 hours.
- Spray nonstick pan with olive oil and place salmon, skin side down, ontop of 1/2 of the thinly sliced lemon and rosemary leaves
- Sprinkle cilantro on top of salmon, and place the rest of the lemon on top of the salmon
- Turn oven onto broil-high.
- Place salmon into oven and roast for about 10 minutes.
- Rule of thumb, broil salmon for 10 minutes per inch of thickness. So if salmon is 1 1/2 inches, broil for 15 minutes.
- Remove from oven and enjoy! Great with brown rice and asparagus 😉
Sustainable Fish Inforation!
Fish populations have been having issues related to human caused negative environmental impacts. One isue is overfishing. There has not been effective management of connsumption habits, just to name one. According to Monterey Bay Aquarium Sea Watch, “scientists know that nearly two-thirds of assessed fish populations are unhealthy and those that have not been assessed are likely in even worse shape.” (1999-2015 Monterey Bay Aquarium Foundation).
