Have you heard of this zoodle craze?? I definitely have. I see it all over Instagram and Pintrest, however had never tried it, until tonight! My world will be forever changed.
This delicious invention is SO low in calories and packed with vitamin A, vitamin C and potassium! These are are great for athletes–helping your organs, tissues and cells function. My recipe below was ~250 calories for the entire thing!) Zoodles can be a great side dish, or entrée.
How do you make these zoodle things you ask? Well, it really is quite simple. Here is how!!
1. Get a spiralizer. Amazon.com has a bunch of great ones! Check one under your idea price range, and check the reviews. They are usually pretty legit. I used a cheap hand twist one, it was a little tedious, but got the job done. If you want a fancy one, I’ve heard great reviews on the “Paderno World Class Cuisine A4982799 Tri-Blade Plastic Spiral Vegetable Slicer”. The list price is ~$50, but you can find good deals online.
2. Look up a recipe. Pintrest has zillions of zoodle recipes. It can be kind of overwhelming…so you can just try mine first 😉
3. Go to the Grocery (with a list). Grab whatever you don’t have at home.
4. Follow my cooking instructions below!
I kind of throw things together when I cook, so the recipe is a bit of an estimate for some items! Do taylor based on your liking! The flavor of this dish was delicious! It tasted like curried noodles with a slight peanut taste from the PB2 and some ginger zing.
What I Put In It:
- 4-5 medium zucchini (I used 3 green, 2 yellow)
- 1 medium carrot (I used a peeler, and peeled it into little sheets)
- 1 Tbsp olive oil
- 3 medium cloves of garlic, crushed
- 1 Tbsp crushed ginger (I crushed it in a garlic press)
- 1C red onion, diced
- 2Tbsp low sodium soy sauce
- 1/4C cilantro, chopped
- 2 Tbsp curry powder (you can use more or less deepening on your spice liking)
- 1Tbsp PB2 (see below for a picture, this is dry peanut butter. I used the kind with chocolate, I’m weird. They make a plain version as well)
- 2Tbsp Sriracha sauce (I love Sriracha…so I used more, this again is depending on your liking)
- 1Tbsp sesame seeds
How I made It:
- Spiralize your zucchini (any spiralizer works here, they can look more like noodles or flat like mine. Both equally delicious)
- Turn on the stove to a medium/high heat.
- Pour olive oil, garlic, ginger and into heated pan.
- Throw zucchini, carrots onions into the pan, stir with wooden spoon (think stir fry)
- After about 1 minute or 2, pour in the soy sauce, drizzle Srirache on top, and stir.
- Continue to stir gently with the spoon. After about 3-4 minutes, or once zucchini starts looking slightly transparent. Add in the cilantro, curry powder and PB2. Mix it all up and continue to stir for another minute.
- When zoodles look transparent, they are done! Drizzle the finished zoodles with sesame seeds and give another quick stir.

This is the PB2 I was talking about. This stuff is great!! You can find it at Whole Foods, and a majority of the specialty super markets. Again, they make a plain version that I would recommend using for this recipe 😉I really like Trader Joe’s Curry Powder. It’s pretty mild for heat factor, and great flavor!
