This is a delicious, high protein side dish or meal. All it takes is a little chopping and mixing and you have a lots of food to last a few days. Plus, its very high in fiber and protein. Enjoy!
Ingredients
- 2Tbsp red wine vinegar
- 2Tbsp lime juice
- 1Tbsp agave
- 1Tbsp olive oil
- 2 garlic cloves, chopped
- 1/4tsp dried oregano
- 3/4tsp cumin
- 1/4tsp fresh ground pepper
- 2 chipotle peppers (chopped) with adobo sauce (2 peppers from the can, find in the Mexican section of the grocery store)
- 2 ears of fresh corn (or 1C canned kernels)
- 1 can of black beans (14.5oz can)
- 1C chopped red onion
- 1 red bell pepper, diced
- 1/2C fresh cilantro, chopped
- 1 avocado
- Optional: hot sauce
Directions:
- In a small bowl, mix red wine vinegar, lime juice, honey, olive oil, garlic, oregano, cumin and chipotle peppers
- In a large bowl, mix corn, beans, onion, bell peppers, cilantro and avocado. Pour dressing over the ingredients and stir gently
