Black Bean and Corn Salad

 This is a delicious, high protein side dish or meal. All it takes is a little chopping and mixing and you have a lots of food to last a few days. Plus, its very high in fiber and protein. Enjoy!


  • 2Tbsp red wine vinegar
  • 2Tbsp lime juice
  • 1Tbsp agave
  • 1Tbsp olive oil
  • 2 garlic cloves, chopped
  • 1/4tsp dried oregano
  • 3/4tsp cumin
  • 1/4tsp fresh ground pepper
  • 2 chipotle peppers (chopped) with adobo sauce (2 peppers from the can, find in the Mexican section of the grocery store)
  • 2 ears of fresh corn (or 1C canned kernels)
  • 1 can of black beans (14.5oz can)
  • 1C chopped red onion
  • 1 red bell pepper, diced
  • 1/2C fresh cilantro, chopped
  • 1 avocado
  • Optional: hot sauce


  1. In a small bowl, mix red wine vinegar, lime juice, honey, olive oil, garlic, oregano, cumin and chipotle peppers
  2. In a large bowl, mix corn, beans, onion, bell peppers, cilantro and avocado. Pour dressing over the ingredients and stir gently
  3. That’s it! Enjoy!!
