Salt and Pepper Cucumber “Chips”

Summer time is here! So is BBQ time, get together time and SNACKING time!

Think about when you go meet with friends for a BBQ. What kinds of snacks are typically available? If you said veggies and fruits, you are a rare one! Not to say chips and other “snacks” aren’t bad, but we always should be finding a way to squeeze something healthy in. That is where these guys come into play. Salt and Pepper Cucumber “Chips”. Here is a super easy way to get some hydrating healthy snacks in the mix!

Ingredients

  • 1 hot house cucumber (any cucumber will do!) washed (you don’t have to peel it!)
  • Fresh ground pepper
  • Sea salt
  • Garlic powder

Directions:

  1. Slice cucumber into 1/2″ slices
  2. Sprinkle with pepper, sea salt and garlic powder to lightly coat.
  3. That is really it! Enjoy this finger food alone, or alongside hummus.
